    • YES! Saltspring Island mussels are certified sustainable by Ocean Wise.            Our mussels are unique because they are harvested in a way that protects marine ecosystems and promotes responsible aquaculture practices. Additionally, our mussels are often fresher and of higher quality, as they are carefully monitored throughout the farming process. Choosing certified sustainable mussels supports both delicious dining and the health of our oceans.
    • Rope grown mussels are also a recommended "Best Choice" by Seafood Watch.

  4. Are mussels fed a diet on the farm?

  5. Are any other nutrients or therapeutics used in mussel farming?
    • No. Mussel farming stands out as one of the most sustainable agricultural practices globally, as it relies on no pesticides, fertilizers, or harmful chemicals. This eco-friendly method ensures that the surrounding environment remains pure and untainted, contributing to a healthier marine ecosystem.
  6. Do mussels help with ocean acidification?
    • Yes. Mussels filter tremendous amounts of seawater for their weight, removing phytoplankton which in turns removes excess carbon from the sea helping with ocean acidification.
  7. Do mussels help clean the ocean in other ways?
    • Yes.  Mussels help remove excess nutrients, contributing to healthier water quality. Additionally, these farms create a nurturing environment for a diverse range of sea life, supporting biodiversity and promoting a balanced ecosystem.

Preparation and Cooking

  1. Do I need to clean mussels before cooking?
    • No just rinse mussels for about one minute under cold running water while agitating.  Remove any remaining beards by pulling them towards the tip of the shell. Discard mussels that do not close even slowly after tapping and have a pleasant odour. (some may close very slowly). Smell is the best indicator if the mussel smells like the sea with no foul smell, it is fine to cook.
  2.  How do I cook mussels?
    • Mussels are best cooked in a tight-fitting lid on high heat. Typically, a small amount of liquid often wine, beer or even cider or just water is used to create steam which cause the mussels to open which takes 1-2 minutes on high heat. After shells open mussels are done in 1 minute. Be careful to overcook as this will result in tough rubbery mussels.
  3. What if some mussels do not open after cooking?
    • Sometimes one or two mussels do not open after cooking but the old adage to throw these still closed mussels away is a myth. Usually, they have a strong abductor muscle, and a knife can be carefully inserted between the shells to pry them open. If the mussel looks and smells normal it is fine to eat.
    • If many mussels do not open it is because they have not been cooked at high enough temperatures for example in a fry pan with no lid. Steam created by using a tight-fitting lid for a short time will ensure all mussels pop open.
