Yvonne's Mediterranean Dinner
Ingredients
2 lb. mussels, scrubbed
4 tbsp. butter
3 shallots, sliced thin
1 whole garlic pod, each clove peeled and sliced
2 tbsp. finely chopped ginger
1 tsp. red chili flakes or aleppo pepper
1 hot red chili pepper thinly sliced (optional)
1 lb. tomatoes, peeled and chopped
1 bunch parsley, roughly chopped, stems OK
1 cup dry white wine
salt



Preparation & Cooking Instructions
1. Melt butter in a large pot with tight fitting lid
2. Add shallots, garlic, ginger, chili flakes & sliced chili pepper. Gently saute until softened. Do not btown.
3. Add tomatoes, salt & white wine. Increase heat to high.
4. When wine is boiling, add mussels and put lid on pot.
5. Cook on high heat 3 to 5 minutes shaking pan gently from time to time.
Tip: Don't open lid. Ideally use glass lid so you can see when mussels open. Check to see if mussels are open after 3 minutes. This indicates they are done or need more time cooking. They only need to open a little.
6. When done, add the parsley and give it a stir.
7. Serve in bowls with plently of the juice. Serve with buttery thick toasted crunchy bread.
8. Discard any mussels that did not open.

I’m originally from Prince Edward Island and even had a summer job back in 1969 with their provincial Fisheries Department when the groundwork was being done for developing the mussel industry. A lot of sneering from folks who asked rhetorically, “Who’d ever eat those?!”
All this is to say, I know my mussels!!!!!
But, I’ve never had any mussel, including PEI ones, that can match your Salt Spring Mussel!

I just wanted to say again how great I find your mussels! I had them in the classic Moules et frites the other evening and they were a big hit. This morning I am having them on a piece of toasted French bread with a little garlic mayo, a breakfast dish that my wife finds strange. But it’s like going to heaven!
